Why We Love Pizza
What is it about Pizza that keeps us coming back for more? First of all, it’s warm and soft. But in addition to that, it has a great mix of flavors. It’s salty (cheese), sweet (tomato sauce), bitter (basil), spicy (red peppers), and if it’s not keto, it’s filled with carbs (white flour and sugar). Be careful as some of the ingredients could contain MSG which stimulates insulin big time.
Toppings Are King
We all love a good crust but sometimes the crust is just a carrier for the delicious toppings including cheese. This is why it is key to choose great toppings when making your Keto Pizza. You can put just about anything on top of a Pizza. From veggies, to meat to olives, to cheese, the variety is endless. Variety in toppings is great because it makes it more appealing visually and provides a variety of textures.
The crust in this recipe is very basic. You can even make the crust ahead of time and freeze it for future “fast food”. Because of the egg in the crust, it holds together well, but making it in a round frying pan ensures perfect distribution and symmetry.

KetoMAD Pizza Recipe
The trick to this recipe is cooking the crust in a large round oven-safe frying pan. Make sure the handle won’t melt, metal handles are best. This creates a perfectly round, flat even crust. If you’ve ever tried to roll out a gluten-free dough you know what I mean.
- 1 teaspoon coconut oil
- 4 eggs
- ½ cup shredded mozzarella
- ¼ cup grated parmesan
- 2 teaspoons dried oregano
- ¼ teaspoon salt
- ¼ cup blanched almond flour
Preheat oven on low broil. Melt coconut oil in large frying pan with oven-safe handle Leave heat on low setting. In large bowl scramble eggs, salt and oregano together. Add flour and stir until well combined. Add cheese and stir well. Pour into frying pan and spread evenly. This will be the crust. Turn heat up to medium, cook bottom half without burning. The top half should still be wet and not cooked. Place frying pan on middle rack of oven with broil on low. Cook top of crust until slightly bubbly on top and light brown. Place potholder on handle and remove pan from oven. While crust is cooling (10 minutes) add desired toppings. Sprinkle mozzarella over the toppings. Place back in oven on low broil. Broil just until cheese is melted, remove from oven. Let pizza cool on counter for 10-15 minutes. Loosen pizza with a spatula and slide onto cutting board. Using a pizza cutter, cut into 6 pieces. Serve hot, with a fork.
